Vegetarian Burger Recipe
 Millet Patties
Here’s a great recipe for light and delicious vegetarian burgers made of millet, with a delicious sauce to go over them! Enjoy!
Millet Patties
Light yet satisfying. Great for snacking or lunch.
Preparation time:  45 minutes  | 
    Serves:  5 (8-10 patties)  | 
  
Bring to a boil and simmer until all water is absorbed:
       1 cup millet (rinsed 3 times)
       4 cups water
Cover and set aside.
While millet is cooking, saute until onions are golden brown:
       2 tablespoons canola or sunflower oil
       1 cup onions, minced
       1 clove garlic, peeled and minced
Add and saute for 3 minutes:
       1 cup carrots, peeled and grated
In a separate bowl, combine:
       1 teaspoon salt
       1 teaspoon dried dill weed
       1/2 teaspoon dried thyme
       1/4 cup fresh parsley, minced
       1/4 cup sunflower seeds, roasted
       1/2 cup bread crumbs or 1/2 cup cooked rice
Add cooked vegetables and millet to the bowl, and mix well.
Make patties place on oiled baking tray, and bake at 350 degrees for 20-30 minutes. (A 10 X 15” baking tray can hold 8 patties.)
Serving idea: Serve with steamed vegetables and Tahini Sauce or Mushroom Gravy.
Tahini Sauce
Thick and hearty sauce–great on Stuffed Cabbage, Vegetable Pasties, and Patties (Rice, Millet, or Tofu).
Preparation time:  15-20 minutes      | 
    Makes:  1 cup  | 
  
Sauté in a pot until onions are golden:
      3 tablespoons canola or sunflower oil
        1 small onion, minced
      2 tablespoons fresh ginger, peeled and grated
Add:
      1/3 cup raw tahini
      1/3 cup plus 2 tablespoons water
      2 tablespoons tamari or Bragg Liquid Aminos
      1 tablespoon maple syrup
      1/4 teaspoon black pepper
Stir with a wooden spoon and simmer for 5 minutes.  Blend all ingredients in a food processor until smooth.  Add salt to taste.  Before serving, mix into the sauce:
      1/4 cup fresh parsley or fresh dill, minced
Variation:
After blending all the ingredients in food processor, add 1/2 cup sliced mushrooms that have been sautéed in olive oil.
