Cilantro Beets Recipe
Really brings out the natural flavor of beets.
Preparation time: 10 minutes
Serves: 4 - 6
Place in a glass baking pan (9"x13" works well):
4 medium beets, cut in half (lengthwise)
1/2 inch water
Cover with foil and bake at 350° for 45-60 minutes until soft. Let beets cool slightly, then peel them and cut into cubes or slices. (After baking, the skin becomes soft and is easy to peel off with your fingers.)
Pour on top of the beets the following mixture of:
11/2 tablespoons olive oil
11/2 tablespoons fresh lemon juice
1 packed tablespoon whole, fresh cilantro leaves without stems)
Serve warm or cold.
