Garbanzo Marinade with Tomatoes Recipe
 
 Great summer protein salad
  
| Serves: 4 | 
Ingredients:
       1 cup garbanzo beans pre-soaked
        4 cups water
       2 bay leaves
   
       2 tablespoons sesame seeds
       1 cup tomatoesminced
       1/4 cup olive oil
       1/4 cup Bragg’s Liquid Aminos
       1/4 teaspoon black pepper
       1/4 cup fresh parsley, minced
       2 tablespoons sesame seeds,toasted
   
 
Place pre-soaked garbanzo beans, 4 cups water, and 2 bay leaves in pressure cooker. Secure lid of pressure cooker and bring to a boil on high heat. Lower heat and simmer for 8 minutes (or as needed according to pressure cooker used).
Turn heat off. Let pressure cooker cool down until it is safe to open.
In a dry skillet, toast 2 tablespoons sesame seeds until light brown. Set aside.
In a bowl, mix 1 cup minced tomatoes, 1/4cup olive oil, 1/4 cup Bragg’s and 1/4 teaspoon black pepper. Let sit to marinade for about 15-20 minutes.
In separate bowl, mix 1 cup cooked garbanzo beans with 1/4 cup fresh minced parsley and 2 tablespoons toasted sesame seeds. Let sit for 5 minutes to absorb flavors. Add marinade.
