Gingered Yams
A great winter dish – can be served as a side dish or as a dessert.


Serves: 4
Preparation time: 10 minutes
Baking time:30 minutes
Preheat: oven to 375 degrees

Peel and cut into 1" rounds:
    2 medium yams

Mix in a bowl:
    2 tablespoons olive oil
    1 tablespoon maple syrup
    2 tablespoons fresh ginger juice*
    ½ teaspoon powdered ginger

Coat the yams with the ginger mixture. Place on a baking tray and bake approximately 30 minutes at 375 degrees, or until yams are soft.

*To make ginger juice: Grate whole, fresh ginger root. Place a small amount at a time into your palm and squeeze its juice into a bowl. Discard ginger pulp. Or use a garlic press to squeeze fresh ginger. Place grated, unpeeled ginger into the garlic press, and squeeze juice into a bowl.
