Carrot Cilantro Salad Recipe
Color, freshness and zing!

Carrot Cilantro Salad

Serves: 3-4
Any Season

    2 cups carrotspeeled and grated (about 4 med size carrots)
    1/4 cup fresh orange juice
    2 tablespoons olive oiloptional
    2 tablespoons fresh lemon juice
    1 tablespoon fresh ginger root juice*
    2 teaspoons maple syrup
    1/4 cup fresh cilantro leaves

Mix in a bowl 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, 1 tablespoon fresh ginger root juice*, 2 teaspoons maple syrup and 1/4 cup fresh minced cilantro leaves.

Add in 2 cups peeled and grated carrots. Mix well. Let sit to absorb flavors, about 10 minutes. Serve.

* Making ginger juice:
Grate whole, unpeeled ginger root. Place small amount of grated ginger into palm of hand and squeeze its juice into a bowl. Discard ginger pulp.
