Rice-Patties
A Guest favorite.
A satisfying and unusual way to enjoy rice.


Serves: 5 (9-10 patties)
All Year

Preparation time: 40 minutes
Cooking time: 10-15 minutes
Baking time: 15-20 minutes
Preheat oven to 350

 

Bring to a boil and then simmer until all water is absorbed:
    1 cup white or brown basmati (rinsed 3 times)
    3 cups water

Make sure rice is cooked and sticky. Set aside.
Saute until onions are golden:
    2 tablespoons canola or sunflower oil
    1 cup onions, minced
    2 cloves garlic, peeled and minced

Add and saute for 3 minutes
    1 1/2 cups mushrooms, sliced
Set aside.

In a bowl, mix:
    2 tablespoons fresh parsley
    1 teaspoon dried dill weed
    1 teaspoons salt
    1/4 cup sunflower seeds, roasted
Add:
    sauteed vegetables
    cooked rice

Mix well and make into patties. Place patties on oiled baking tray and bake at 350 for 15-20 minutes or until golden and crisp. (A 10"x15" baking tray can hold 8 patties.)
