Green Split Pea Soup Recipe
Silky green with a hint of ginger, this soup makes a colorful entrée in a festive meal.


Serves: 4
Preparation time: 10 minutes
Soaking time: overnight
Baking time:45 minutes

Soak overnight:
    1 cup green split peas, rinsed
    3 cups fresh water

Bring to a boil in a large pot:
    Drained, soaked peas
    ½ medium onion, minced (about 2/3 cup)
    ¼ fresh ginger root, peeled and grated
    4 ½ cups fresh water

Reduce heat to low and simmer, with the lid ajar, for about 40minutes, until [peas are soft. Turn heat off, and let sit for 5-10 minutes to cool.

Blend in blender in small batches or in food processor. (A blender will create a smoother, silkier texture.)

Add while blending:
    2 tablespoons olive oil
    2 teaspoons salt or to taste.

Garnish with fresh parsley sprigs.
