Berry Silken Tofu Mousse
A quick way to create a delicious, nutritious, and healthy gluten-free desert.

Berry-Silken Tofu Mousse

Serves: 4-5
All Year

    1 package sprouted silken tofu (12-14 ounces)
    12 ounces fresh or frozen (and thawed) raspberries
    1/2 cup maple syrup
    Whipping cream or plain yogurt


In a food processor, blend 1 package sprouted silken tofu, 12 ounces raspberries (save a few for decor) and 1/2 cup maple syrup until smooth.

Spoon mixture into 4-5 elegant cups and refrigerate for 1-2 hours before serving.

Serve with whipping cream or plain yogurt and more berries.
