Colorful Baked Vegetables Recipe
Original and simple way to enjoy vegetables. Good with Hummus and Plain Rice.
Preparation time: 15-20 minutes
Mix in a bowl:
1/4 cup olive oil
1 teaspoon salt
1/4 cup fresh lemon juice
1/4 teaspoon black pepper
Add to marinade:
3 celery stalks, cut into 1/2" diagonals
2 carrots, peeled and cut in chunks
3 green onions, minced (optional)
4 whole cloves garlic, peeled (optional)
1 yam, peeled and cubed
Coat vegetables thoroughly. Spread vegetables on baking tray and bake at 375° for 30–45 minutes, making sure vegetables are soft inside and crispy outside.
Note: When multiplying the recipe for larger quantities, the oil does not need to be increased proportionally. For example, if tripling the recipe, double the oil.
