Light and tasty variation on a popular favorite.
Preparation time: 15-20 minutes
Marinating time: 30-60 minutes
Baking time:30 minutes
Preheat oven 350°
Mix in a bowl:
1/3 cup tamari
1/3 cup olive oil
3 cloves garlic, peeled and minced
1/3 cup fresh lemon juice
10 small zucchini, cut into quarter rounds
Marinate for 30–60 minutes.
Spread on baking pan (9"x13" works well). Bake at 350° for 30 minutes.
Remove from oven, place in a bowl, and mix in:
1/3 cup fresh parsley, minced
Serving idea: This is a nice side dish with Pasta, Plain Rice or Pinto Beans Italiano.
