Carrot SaladRecipe from Vegetarian Cooking for Starters
A raw, fat free, and vegan treat
Prep time: 20 minutes
Mix in a bowl: 1 tbs. fresh lemon juice 1 t. fresh ginger root juice 1 t. maple syrup 2 tbs. fresh cilantro leaves, minced
Add and mix well: 2 cups of carrots, peeled and grated
Let sit to absorb flavors for 10 minutes Serve!
