Roasted Eggplant with Balsamic Dressing Recipe
A great, easy-to-make side dish.


Preparation time: 20 minutes

Baking time: 45 minutes

 

Serves: 6

Spring, Summer

Preheat oven to 350°.

Wash and slice into 3/8" rounds:
    1 large eggplant

Brush both sides of eggplant with olive oil. Place eggplant slices on baking tray in a single layer. Bake for 45 minutes at 350° until slightly browned.

While eggplant is baking, mix:
    2 tablespoons balsamic vinegar
    1/4 cup olive oil
    1 tablespoons dried chives(optional)
    2 tablespoons fresh lemon juice
    1 teaspoon salt

Take garlic out of foil and squeeze garlic into mixture in food processor. (It will be like a paste.) Blend together until smooth. Add a small amount of cooking water if you prefer a thinner consistency
