Mushroom Gravy Recipe
Great with Vegetable Pasties, Tofu Puff Pasties, and Patties (Rice, Millet, or Tofu).


Preparation time: 20 minutes

 

Makes: 1 ¼ cups
All Year

Sauté for 5 minutes:
    2–4 tablespoons olive oil
    1 ½ cups mushrooms, sliced

Mix in a small pot and simmer:
    1 cup vegetable broth (1 cup boiled water and 11/2 teaspoons powdered vegetable broth)
    3 tablespoons tamari or Bragg Liquid Aminos
    fresh ginger juice* (2" piece)

Add the sautéed mushrooms to simmering mixture.
Mix in a bowl:
    2 tablespoons cold water
    1 tablespoon arrowroot powder

Add to the mushroom mixture and stir frequently until liquid thickens.

* Grate ginger root, place small amount at a time into your palm, and squeeze juice into a bowl. Discard ginger pulp. You can also use a garlic press to squeeze fresh ginger: Place grated, unpeeled ginger in garlic press and squeeze juice into a bowl.
