Barley Bread Recipe
A quick, nonfat, crusty country loaf.

Preparation time: 15 minutes
Baking time: 20-25 minutes


Makes: 2 small loaves
Spring, Autumn

Preheat oven to 375

Mix in a bowl:
    11/2 cups whole wheat flour
    1 cup unbleached white flour
    1 cup barley flour
    1 teaspoon salt
    1 teaspoon baking powder
    2 tablespoon sesame seeds (optional)

Add and Mix:
    2 cups buttermilk or 21/2 cups plain yogurt

The dough should be soft. With wet hands place dough on oiled baking tray. Form into 2 “baguette” shaped loaves. Using sharp knife, lightly make diagonal slits on surface of loaves. Bake 25-35 minutes at 375° until golden brown. Cool completely, then slice thin.
